Apple Butter Muffins
Makes 18 muffins
1 3/4 C flour
1/3 C sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. salt
1/4 tsp. nutmeg
1/8 tsp. allspice
1/8 tsp. ginger
1 egg, lightly beaten
3/4 C milk
1/4 C vegetable oil
1/2 C thick apple butter (a thick apple spread, buy it in the jams and jellies section of the market)
Topping:
1/2 C crushed pecans or walnuts
3 T sugar
- Preheat oven to 400F.
- In a medium bowl, combine the first eight ingredients.
- Combine egg, milk and oil; stir into dry ingredients just until moistened.
- Fill greased or paper-lined muffin cups with a round tablespoon of batter. Top each with a rounded teaspoon of apple butter top with more batter.
- Combine topping ingredients; sprinkle over muffins. Bake for 15-18 minutes. Cool in pan 10 minutes before removing to a wire rack to cool.
