Apple Rhubarb Pie
Serve with whipped cream or vanilla ice cream.
2 cups flour
1/3 pound butter
1 egg
4 apples
1 1/4 cups rhubarb
2 tablespoons water
1 tablespoon corn starch
2 tablespoons sugar
1 teaspoon cinnamon
4 tablespoons honey
1 pint heavy cream or vanilla ice cream
- In a bowl, combine flour, crumbled butter, and egg. Knead until smooth.
- Put the dough in the refrigerator while you prepare the filling.
- Peel and cut apples into wedges. Clean and cut rhubarb into small pieces and cook for five minutes in 2 tablespoons of water. Add the corn starch and sugar. Roll out the pie dough to fit a 9" pie pan.
- Spoon rhubarb filling on top and arrange apple slices around. Sprinkle cinnamon over the pie and pour the honey on top. Bake at 350F until the crust is golden brown, about 30 minutes.
