Banana Poppy Seed Muffins
Makes 12 muffins
2 med. bananas, peeled
1 egg
3/4 C sugar
1/4 C vegetable oil
2 tsp. grated orange zest
2 C flour
1 1/2 T poppy seeds
2 tsp. baking powder
1/2 tsp. salt
- Preheat oven to 375F.
- Puree bananas in blender to make 1 cup of pureed bananas.
- In medium bowl, mix bananas, egg, sugar, oil and orange zest until well blended.
- In large bowl, combine flour, poppy seeds, baking powder and salt.
- Stir banana mixture into flour mixture until evenly moistened. Spoon batter into greased 2 1/2-inch muffin cups.
- Bake for 20 minutes or until cake tester comes out clean.
- Remove from pan; cool on wire rack. Dip warm tops in sugar.
