Broccoli Casserole
Makes 4 servings.
1 package (10 ounces) frozen chopped broccoli
1 1/4 cups lukewarm skim milk
Cholesterol-free, fat-free egg substitute, equivalent to 3 eggs
1/2 cup grated Parmesan or Romano cheese
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
- Preheat oven to 350oF. Grease 1 1/2 - 2 quart caserole; set aside.
- Cook broccoli according to package directions; drain.
- In small bowl, combine remaining ingredients; beat until well blended.
- Pour into prepared casserole. Add broccoli. Bake 25 to 30 minutes or until knife inserted into center comes out clean. Serve immediately.
