Brown Rice


Makes 4 servings


1 large onion, chopped
1 clove garlic, crushed
1/4 cup oil
1 cup uncooked rice (not Minute rice)
1 (10 1/2 ounce) can consomme
1 1/4 cups water
1 (6 ounce) can sliced mushrooms, drained
salt and pepper to taste


  1. Lightly brown onion and garlic in oil; stir in rice, consomme, water, mushrooms, salt and pepper. Bring to a boil, lower heat, cover and cook about 40 minutes or until rice is tender and liquid is absorbed. Stir occasionally during cooking.
