Brownie Cheesecake with Nuts
This is a rich and creamy cheesecake stuffed with chewy brownies and topped with fudgy sauce, whipped cream and nuts. MAKES: 16 SERVINGS
CRUST
9 oz pkg chocolate wafer cookies
1/2 cup chopped walnuts
3 tbs sugar
6 tbs butter, melted
CAKE
3 pouches prepared mini brownies
3 pkgs 8 oz each cream cheese
3/4 cup sugar
2 tbs flour
4 egg yolks
1 egg
1/2 cup heavy cream
2 tsp vanilla
1 cup fudge sauce
whipped cream topping
chopped walnuts
- HEAT OVEN TO 325deg. CRUST: In blender, combine cookies, walnuts, and sugar process until finely ground. Combine with butter, press crumb mixture into bottom and up sides of springform pan. Bake 12 min. or until firm. Cool 10 min. Wrap outside of pan with foil.
- CAKE: Cut each brownie into pieces, set aside. Beat cream cheese until fluffy. Beat in sugar until smooth. Add flour, beat in egg yolks and egg until combined. Beat in cream and vanilla. Pour batter into crust. Press brownies into batter. Place on oven rack. Bake 45 min. or until lightly golden.
- Cool. Refrigerate 6 hours.Transfer cake to serving plate. Spread top with fudge sauce.
- GARNISH WITH WHIPPED TOPPING ROSETTES AND SPRINKLE WITH CHOPPED WALNUTS.
