Cheese Grits
Serves eight.
2 ounces jalapeno cheese
2 ounces Cheddar cheese
2 ounces mozzarella cheese
6 cups boiling water
1 1/2 cups quick grits
4 tablespoons butter
1/2 teaspoon garlic salt
2 tablespoons milk
1 egg

- Preheat oven to 400F. Coarsely grate or cube the cheeses. Pour grits, butter, and garlic salt into boiling water.
- Stir to mix, cover, reduce heat, and simmer for 5 minutes. (Stir occasionally to insure a smooth consistency.)
- Remove from heat and add milk and egg as well as grated cheeses.
- Mix until blended and pour into a greased 10x7-inch baking
- dish. Sprinkle with paprika. Bake 30 minutes.
