Cheese Grits


Serves eight.


2 ounces jalapeno cheese
2 ounces Cheddar cheese
2 ounces mozzarella cheese
6 cups boiling water
1 1/2 cups quick grits
4 tablespoons butter
1/2 teaspoon garlic salt
2 tablespoons milk
1 egg
paprika


  1. Preheat oven to 400F. Coarsely grate or cube the cheeses. Pour grits, butter, and garlic salt into boiling water.
  2. Stir to mix, cover, reduce heat, and simmer for 5 minutes. (Stir occasionally to insure a smooth consistency.)
  3. Remove from heat and add milk and egg as well as grated cheeses.
  4. Mix until blended and pour into a greased 10x7-inch baking
  5. dish. Sprinkle with paprika. Bake 30 minutes.
