Chewy Chocolate Cookie
Do not overbake as the cookies will soft.
They puff during baking, but flatten upon cooling.
1 1/4 cups butter or regular margarine, softened
2 cups sugar
2 eggs
2 tsp vanilla
2 cups flour, unsifted
3/4 cup baking cocoa
1 tsp baking soda
1/2 tsp salt
1 cup finely chopped nuts
- Cream butter or sugar in a large mixer bowl. Add the eggs and the vanilla. Blend well.
- Combine flour, cocoa, baking soda, and salt. Blend this into the creamed mixture.
- Stir in the nuts. Drop by teaspoonfuls onto ungreased cookie sheet.
- Bake at 350 oven for 8 to 10 minutes.
- Cool on cookie sheet until set. This will take about one minute. Then remove to wire rack and cool completely. Glaze with chocolate glaze.
