Chewy Ginger Cookies


Yield: about 4 dozen.


3/4 cup shortening
1-1/4 cups sugar, divided
1 egg
1/4 cup molasses
1 tsp. vanilla extract
2 cups all purpose flour
1 tsp. ground cinnamon
1 tsp. ground ginger
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cloves


  1. In a mixing bowl, cream shortening and 1 cup sugar. Add the egg, molasses and vanilla; mix well.
  2. Combine dry ingredients; add to creamed mixture and mix well.
  3. Roll into 1-inch balls; roll in remaining sugar. Place 1-1/2 inch apart on ungreased baking sheets.
  4. Bake at 375 degrees for 10 minutes or until lightly browned.
  5. Cool on wire racks. Store in an airtight container.
