Chicken Cacciatore Parmesan
GOOD WITH CRUSTY BREAD.
Flour, 1/2 cup
Chicken Breast Halves, 16, boneless, skinless
Oil, 4 tbs
Yellow Bell Peppers, 3, cut in strips
Onions, 2, sliced
Mushrooms, 2 pkgs 8 oz each, sliced
Italian Sausage & Garlic Pasta Sauce, 25 oz jar
Water, 1 cup
Olives, 3/4 cup
Mozzarella Cheese, 8 oz bag shredded
- Have ready 4 baking dishes. Spread flour on wax paper, dip chicken in flour to coat. In a skillet, heat oil and cook chicken 10 min. turning once, until cooked through and browned, putting 4 pieces of chicken in each baking dish.
- Heat remaining oil in same skillet. Add peppers, onions, and mushrooms, saute until tender. Off heat, pour sauce into skillet, stir in water and olives.
- Spoon 2 cups over chicken in each baking dish. Sprinkle each with 1/2 cup cheese.
- HEAT OVEN TO 350 DEGREES. Cover with foil, bake 40 min. or until sauce bubbles, cheese melts, and chicken is heated through.
