Chicken Cacciatore Parmesan


GOOD WITH CRUSTY BREAD.


Flour, 1/2 cup
Chicken Breast Halves, 16, boneless, skinless
Oil, 4 tbs
Yellow Bell Peppers, 3, cut in strips
Onions, 2, sliced
Mushrooms, 2 pkgs 8 oz each, sliced
Italian Sausage & Garlic Pasta Sauce, 25 oz jar
Water, 1 cup
Olives, 3/4 cup
Mozzarella Cheese, 8 oz bag shredded


  1. Have ready 4 baking dishes. Spread flour on wax paper, dip chicken in flour to coat. In a skillet, heat oil and cook chicken 10 min. turning once, until cooked through and browned, putting 4 pieces of chicken in each baking dish.
  2. Heat remaining oil in same skillet. Add peppers, onions, and mushrooms, saute until tender. Off heat, pour sauce into skillet, stir in water and olives.
  3. Spoon 2 cups over chicken in each baking dish. Sprinkle each with 1/2 cup cheese.
  4. HEAT OVEN TO 350 DEGREES. Cover with foil, bake 40 min. or until sauce bubbles, cheese melts, and chicken is heated through.
