Chicken Cacciatore With Rosemary


3 tbs olive oil
1 pound onions, sliced
4 cloves garlic, minced
4 pounds chicken thighs, drumsticks, and breasts, skinless
1/2 cup dry white wine
3 pounds tomatoes, chopped
1/4 cup tomato paste
1 tsp rosemary
1/4 tsp hot pepper flakes
1 tsp salt
1/4 tsp pepper


  1. Add onions saute until golden. Add garlic, saute 30 seconds. Remove onion and garlic from pan to plate.
  2. In same saucepan, brown chicken. Return all chicken to saucepan, top with onions and garlic. Add wine to saucepan, simmer uncovered until reduce by half.
  3. Add next 4 ingredients. Season with salt and pepper.Reduce heat, cover and simmer 30 min. or until chicken is very tender.
