Cocoa Kiss Cookies
1 cup (2 sticks) butter or regular margarine, softened
2/3 cup sugar
1 tsp vanilla
1 2/3 cups flour
1/4 cup cocoa
1 cup finely chopped pecans
about 54 milk chocolate kisses
powdered sugar
- Beat the butter, sugar, and vanilla in a large bowl until creamy. Stir together the flour and cocoa. Gradually add to the butter mixture. Beat well until well blended.
- Add the pecans. Beat until well blended again. Refrigerate the dough for about one hour or until firm enough to handle.
- Heat the oven to 375 F. Remove the wrappers from the chocolate kisses. Mold a scant tablespoonful of the dough around each chocolate kiss. Cover completely.
- Shape into balls. Place on ungreased cookie sheets. Bake for 10 to 12 minutes or until set. Cool for 1 minute. Remove from cookie sheet to wire rack to finish cooling. Roll in the powdered sugar.
