Coconut Rum Balls
not cookies for kids...
2 1/2 cups finely crushed gingersnaps
1/2 cup honey
6 tbls coconut rum
powdered sugar for rolling
- Combine all ingredients and stir to form a sticky dough.
- Pinch off small pieces of dough and roll into a ball (flour your hands if needed). Roll each ball in powdered sugar.
- Store in an airtight container for at least one week before serving.
- Before serving roll each ball in powdered sugar again. Really easy, flavorful and rich.
