Coconut Rum Balls


not cookies for kids...


2 1/2 cups finely crushed gingersnaps
1/2 cup honey
6 tbls coconut rum
powdered sugar for rolling


  1. Combine all ingredients and stir to form a sticky dough.
  2. Pinch off small pieces of dough and roll into a ball (flour your hands if needed). Roll each ball in powdered sugar.
  3. Store in an airtight container for at least one week before serving.
  4. Before serving roll each ball in powdered sugar again. Really easy, flavorful and rich.
