Creole Beef Soup


Makes 9 1-cup servings.


1 pound lean ground beef
1 chopped onion
1/2 cup chopped green pepper
1 large garlic clove, minced
2 cans (14 ounce each) Cajun-style stewed tomatoes
2 cans (13.75 ounce each) beef broth
1 can cut green beans
1/2 teaspoon ground cumin
1/8 to 1/4 teaspoon cayenne pepper, to taste


  1. In a large pot, brown meat with onion, green pepper and garlic. Cook until the onion is soft. Drain. Stir in remaining ingredients. Bring to a boil.
  2. Reduce heat. Cover and simmer 15 minutes.
