Crispy Layer Chicken Casserole
1/4 cup margarine
1 box chicken-flavored stuffing mix
3 cans mixed vegetables, drained, reserving 3/4 cup liquid
1 can Cream of Chicken Soup
1 1/2 cups cooked, cubed chicken
1 cup mozzarella cheese, shredded
- Preheat oven to 350 degrees. Melt margarine and mix with the contents of seasoning packet from stuffing. Stir in bread crumbs from the mix until slightly moistened.
- Combine soup and reserved liquid from the vegetables. Mix well. Add vegetables and chicken.
- Spread chicken mixture in an ungreased 13x9-inch casserole dish.
- Sprinkle with cheese. Spread moistened stuffing mix on top. Bake, covered, for 20 minutes. Remove cover and bake an additional 5 to 10 minutes until topping is browned.
