Crockpot Beef Fajitas


1-1/2 pounds beef flank or other steak
1 cup chopped onion
1 green sweet pepper, cut into 1/2-inch pieces 1 or 2 jalapeno peppers, chopped
1 T cilantro, chopped
2 cloves garlic, minced OR 1/4 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon salt
1 can (8 oz) chopped tomatoes (1 cup)
12 8-inch flour tortillasYour favorite toppings, such as: shredded Cheddar cheese, sour cream,
hot sauce, guacomole, salsa, chopped green onions, tomatoes, etc.


  1. Cut steak into 6 portions. In crockpot combine meat, onion, green sweet pepper, jalapeno pepper, cilantro, garlic, chili powder, cumin, coriander and salt. Add tomatoes.
  2. Cover and cook on LOW for 8 to 10 hours or on HIGH 4 to 5 hrs.
  3. Remove meat from crockpot and shred. Return meat to crockpot and stir.
