Harvard Beets


Makes 6 servings.


1/3 cup sugar
1 Tablespoon cornstarch
1/2 teaspoon salt
1/2 cup vinegar
2 Tablespoons butter
2 (1 pound each) cans sliced beets, drained OR 3 cups sliced cooked beets


  1. Combine sugar, cornstarch and salt in a saucepan. Stir in vinegar. Cook over medium heat, stirring constantly, until mixture boils and thickens.
  2. Add butter and stir until it melts completely. Stir in the beets. Cook over low heat until thoroughly hot, stirring occasionally.
