Harvard Beets
Makes 6 servings.
1/3 cup sugar
1 Tablespoon cornstarch
1/2 teaspoon salt
1/2 cup vinegar
2 Tablespoons butter
2 (1 pound each) cans sliced beets, drained OR 3 cups sliced cooked beets
- Combine sugar, cornstarch and salt in a saucepan. Stir in vinegar. Cook over medium heat, stirring constantly, until mixture boils and thickens.
- Add butter and stir until it melts completely. Stir in the beets. Cook over low heat until thoroughly hot, stirring occasionally.
