Hawaiian Luau Cookies


These cookies will dry out if not eaten in 2 days. You can freeze them after baking and pull out what you will eat that day.


2 cups flour
2 tsp baking powder
1/2 tsp salt
2/3 cup shortening
1/4 cup sugar
1/2 tsp vanilla
1/2 tsp almond extract
1 egg
3/4 cup well-drained, crushed pineapple
Flaked coconut


  1. Mix together first 3 ingredients and set aside:
  2. Cream shortening, sugar, vanilla and almond. Beat in egg until mixture is fluffy. Blend in pineapple.
  3. Stir in flour mixture (yes, the dough may still seem quite "wet").
  4. Drop tablespoons of dough on cookie sheets. Sprinkle tops with coconut. Bake 18-20 mins at 325F, cool on racks.
