Hawaiian Luau Cookies
These cookies will dry out if not eaten in 2 days. You can freeze them after baking and pull out what you will eat that day.
2 cups flour
2 tsp baking powder
1/2 tsp salt
2/3 cup shortening
1/4 cup sugar
1/2 tsp vanilla
1/2 tsp almond extract
1 egg
3/4 cup well-drained, crushed pineapple
Flaked coconut
- Mix together first 3 ingredients and set aside:
- Cream shortening, sugar, vanilla and almond. Beat in egg until mixture is fluffy. Blend in pineapple.
- Stir in flour mixture (yes, the dough may still seem quite "wet").
- Drop tablespoons of dough on cookie sheets. Sprinkle tops with coconut. Bake 18-20 mins at 325F, cool on racks.
