Homespun Scalloped Potatoes


To make ahead - prepare as directed except for baking. Cover; refrigerate overnight. When ready to serve, bake as directed.


1 package (8 ounces) cream cheese, cubed
1 1/4 cups milk
1/2 teaspoon salt
1/8 teaspoon pepper
4 cups thin potato slices
2 tablespoons chopped chives


  1. In a large saucepan, combine cream cheese, milk, salt and pepper; stir over low heat until smooth. Add potatoes and chives; mix lightly.
  2. Spoon into 1 1/2-quart casserole; cover. Bake at 350F, 1 hour and 10 minutes or until potatoes are tender.
  3. Stir before serving.
