Molasses Cookies
1 c. butter
3/4 c. packed dark brown sugar
1 egg
1/4 c. dark molasses
1/2 c. nonfat dry milk
2 teaspoons baking soda
1/4 teaspoon salt
1/2 teaspoon ground cloves
1 teaspoon cinnamon
1 teaspoon ground ginger
1/4 C. wheat germ
1 c. whole wheat flour
1-1/2 c. white unbleached flour
jelly (I used strawberry)
granulated sugar
- Cream butter and brown sugar with an electric mixer until smooth and light. Beat in egg until fluffy. Add molasses and dry milk; beat well. Blend in baking soda, salt, cloves, cinnamon, ginger and wheat germ; beat 1 minute.
- Sift flour. Add flour to butter mixture until well blended. Form dough into 1-1/2" round balls. Roll ball in granulated sugar and place on well greased cookie sheet. Flatten balls with the palm of your hand to about 3/8" thick. Make a round indentation in the middle with the back of a round measuring teaspoon. Place a teaspoon of jelly in the center of each cookie.
- Bake on 375 degrees for 12-14 minutes.
