Monterey Chicken Fajitas With Bacon
These fajitas are very easy to make, to warm the tortillas, wrap them in foil and warm them in a preheated 350F oven for about 10 min.
4 slices bacon
12 oz mushrooms, halved
1 red bell pepper, cut into strips
1/4 tsp salt
1/4 tsp pepper
1/4 cup chicken broth
4 tsp dry fajita seasoning
4 scallions, chopped
10 oz pkg fully cooked carved chicken breast
8 flour tortillas
4 oz pepper Monterey Jack cheese, shredded
- In skillet, cook bacon until crisp, drain on paper towels. Remove all but 1 tbs drippings from skillet, reserving 2 tsp for cooking chicken.
- Add mushrooms to skillet, cook until golden. Stir in red pepper, salt and pepper cook until peppers are tender. Stir in broth and 1 tsp fajita seasoning. Cook until liquid is thickened, stir in scallions.
- Transfer veggies to platter. Crumble bacon over veggies. Cover to keep warm.
- In same skillet, heat reserved drippings. Add chicken and remaining fajita seasoning, cook until heated through. Warm tortillas.
- Place chicken on platter with veggies.
