Monterey Chicken Fajitas With Bacon


These fajitas are very easy to make, to warm the tortillas, wrap them in foil and warm them in a preheated 350F oven for about 10 min.


4 slices bacon
12 oz mushrooms, halved
1 red bell pepper, cut into strips
1/4 tsp salt
1/4 tsp pepper
1/4 cup chicken broth
4 tsp dry fajita seasoning
4 scallions, chopped
10 oz pkg fully cooked carved chicken breast
8 flour tortillas
4 oz pepper Monterey Jack cheese, shredded


  1. In skillet, cook bacon until crisp, drain on paper towels. Remove all but 1 tbs drippings from skillet, reserving 2 tsp for cooking chicken.
  2. Add mushrooms to skillet, cook until golden. Stir in red pepper, salt and pepper cook until peppers are tender. Stir in broth and 1 tsp fajita seasoning. Cook until liquid is thickened, stir in scallions.
  3. Transfer veggies to platter. Crumble bacon over veggies. Cover to keep warm.
  4. In same skillet, heat reserved drippings. Add chicken and remaining fajita seasoning, cook until heated through. Warm tortillas.
  5. Place chicken on platter with veggies.
