Napa Cabbage Salad


Toss ingredients at serving time only; this salad does not keep well.


1 large head (or 2 to 3 small heads) of Napa cabbage
1 bunch of scallions
6 ounces sunflower seeds, shelled
4 ounces almonds, slivered
2 packages of Top Ramen noodles, Oriental flavor
2 tablespoons olive oil
Dressing:
2 packets of seasoning from Top Ramen noodles, Oriental flavor
1 cup of salad oil
1/2 cup cider vinegar
1 cup sugar or sugar substitute
2 teaspoons soy sauce
2 teaspoons mustard


  1. Rinse cabbage. Drain excess moisture from leaves. Chop cabbage and scallions. Mix and set aside. Saute seeds, almonds and crushed noodles in olive oil until browned. Stir often. Set aside to cool.
  2. Mix ingredients for dressing (may want to use a mixer or blender to mix well).
