Parmesan Biscuits


2 ounces salted butter
2 ounces plain flour
1 pinch cayenne pepper
1 teaspoon freshly ground black pepper
2 ounces grated Parmesan cheese


  1. Cream butter. Season the flour with cayenne and black pepper and work in the butter with the cheese knead until smooth and chill for about 30 minutes or until stiffened.
  2. Roll out onto a floured board to 5mm thickness. Cut into small rounds or squares and place on a greased baking tray and flatten into biscuits.
  3. Prick well with a fork. Bake in 350 oven for 10 minutes.
  4. Cool on a wire rack.
