Pasta With Scallops, Chilli And Garlic
4 tbsp olive oil
12 scallops
a bunch of asparagus
4 servings of pasta of your choice
2 cloves garlic, minced
2 red chilli, minced
2 tsp grated lemon zest
2 tbsp fresh lemon juice
1 tbsp chopped fresh parsley
Salt and pepper to taste
- Season scallops with salt and pepper. Drizzle some olive oil on the scallops. Sear scallops, about 2 minutes on each side. Set aside.
- Blanch or steam asparagus until just done. Cook pasta until al dente.
- Heat olive oil in a pan. Add garlic and chilli. Cook gently in low heat for 2 minutes. Mix in lemon zest and freshly ground pepper.
- Add the drained pasta in the infused oil. Squeeze some lemon juice on the pasta. Add the chopped parsley.
- Mix well and serve immediately with the scallops and asparagus.
