Pineapple Upside Down Cake
SERVE CAKE WARM OR AT ROOM TEMP.
1 1/2 sticks unsalted butter
3/4 cup brown sugar
1 pineapple, cut into slices
1 cup sugar
2 eggs
2 cups sifted cake flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup plus 2 tbs buttermilk
1 tsp vanilla
- HEAT OVEN TO 350F. Butter only side of 9 inch square baking pan.
- In saucepan, melt 1/4 cup butter. Stir in brown sugar, cook until mixture is smooth. Pour into baking pan.
- Place pineapple in decorative pattern on top of sugar mixture. In bowl, beat 1/2 cup butter until creamy. Beat in sugar until mixture is fluffy. Beat in eggs. Into bowl, sift together flour, baking powder, baking soda, and salt.
- Beat flour mixture alternately with buttermilk and vanilla into butter mixture. Spoon batter over fruit in pan. Bake 55 min. or until done. Invert cake onto platter.
