Pineapple Upside Down Cake


SERVE CAKE WARM OR AT ROOM TEMP.


1 1/2 sticks unsalted butter
3/4 cup brown sugar
1 pineapple, cut into slices
1 cup sugar
2 eggs
2 cups sifted cake flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup plus 2 tbs buttermilk
1 tsp vanilla


  1. HEAT OVEN TO 350F. Butter only side of 9 inch square baking pan.
  2. In saucepan, melt 1/4 cup butter. Stir in brown sugar, cook until mixture is smooth. Pour into baking pan.
  3. Place pineapple in decorative pattern on top of sugar mixture. In bowl, beat 1/2 cup butter until creamy. Beat in sugar until mixture is fluffy. Beat in eggs. Into bowl, sift together flour, baking powder, baking soda, and salt.
  4. Beat flour mixture alternately with buttermilk and vanilla into butter mixture. Spoon batter over fruit in pan. Bake 55 min. or until done. Invert cake onto platter.
