Rice Pilaf


Serves 6.


1/2 cup chopped onion
1 cup uncooked rice
1/4 cup butter
1 teaspoon salt
2 cups chicken broth


  1. Cook onion and rice in butter in a heavy saucepan until rice is golden; stir frequently.
  2. Add salt and chicken broth, bring to a boil, reduce heat, cover and simmer 20 minutes.
