Rocky Road Brownies
1 1/4 cups semi-sweet chocolate chips
1 cup miniature marshmallows
1/2 cup chopped nuts
1/2 cup butter or regular margarine
1 cup sugar
1 tsp vanilla
2 eggs
1/2 cup flour
1/3 cup cocoa
1/2 tsp baking powder
1/2 tsp salt
- Preheat oven to 350 F. Grease a 9 inch square baking pan.
- Stir together the chocolate chips, marshmallows, and nuts. Set aside.
- Place the butter in a large microwave safe bowl. Microwave at HIGH for 1 to 1 1/2 minutes or until melted.
- Add sugar, vanilla, and egg. Beat well using a wooden spoon. Add the flour, cocoa, baking powder, and salt. Blend well.
- Spread the batter in the prepared pan. Bake for 22 minutes.
- Sprinkle chocolate chip mixture over the top. Continue baking for 5 minutes or until marshmallows have softened and puffed slightly. Cool completely. With wet knife, cut into squares.
