Spicy Party Meatballs


1 1/2 lbs. Ground beef
1 1/2 c. soft bread crumbs
1/2 med. Onion, chopped
1/3 c. milk
1/4 c. chopped fresh parsley
1/2 t. pepper
1 egg, beaten
1 lb. Mexican or regular Velveeta, cubed
4-oz. Can chopped green chilies
1 pkg. taco seasoning


  1. In a mixing bowl, combine beef, bread crumbs, onions, milk, parsley, pepper and egg; mix well. Shape into 1/2-inch balls. Cook in skillet over medium-high heat 2 to 3 minutes or until browned; drain.
  2. In a saucepan, combine cheese, green chilies and taco seasoning mix; stir until well blended and the cheese is melted. Add meatballs; cover and simmer until heated through.
