Spinach Frittata


1 10-ounce packages frozen chopped spinach
3 cups cottage cheese
1 cup plain bread crumbs
1/2 cup grated Romano cheese, or any kind of cheese except mozzarella
5 eggs
paprika


  1. Preheat oven to 350 degrees F.
  2. Parboil spinach and drain thoroughly. Blend spinach with cottage cheese, 3/4 cup bread crumbs, and cheese.
  3. In a separate bowl beat 3 eggs well and blend into spinach mixture. Lightly oil bottom of an 8x8-inch baking dish; sprinkle remaining bread crumbs over the bottom. Place pan in oven until bread crumbs are golden brown, 3 to 5 minutes.
  4. Spread spinach mixture evenly in the baking dish. Beat remaining eggs and pour evenly over spinach. Sprinkle with paprika. Bake for 45 minutes. Cool for about 10 minutes before serving.
