Squash With Peppers
Serves 6.
4 summer squash
3 green peppers
1/2 C. salad oil
1 tomato, quartered
1 1/2 tsp. salt
1/8 tsp. pepper
1 tsp. sugar
1/2 tsp. dry basil
- Coarsely slice 4 summer squash. Seed green peppers anc cut into strips. Fill blender container loosely with squash and peppers and add water to barely cover. Cover and blend at high speed for 3-4 seconds, or until vegetables are coarsely chopped. Drain and set aside. Repeat with remaining vegetables. In saucepan, heat 1/2 C. salad oil; add drained vegetables and saute for 10 minutes. Add remaining ingredients (tomato, salt, pepper, sugar and dry basil) to blender; cover and blend on high for 10 seconds. Pour tomato mixture over vegetables in saucepan, cover and simmer for 10 minutes.
