tortilla Chips With Corn Salsa


GARNISH WITH CILANTRO LEAVES.


1/2 tsp salt
1/4 tsp pepper
1/4 tsp cumin
1/8 tsp coriander
6 flour tortillas
15 oz can black beans, drained
11 oz can corn kernels
1 roasted red pepper from a jar, diced
1/2 red onion, diced
1 tbs lime juice
1 tsp lime zest
1/2 tsp chili powder
1 cup sour cream
1 cup guacamole


  1. HEAT OVEN TO 400F.
  2. Combine 1/4 tsp salt, pepper, cumin, and coriander.
  3. Cut out 7 circles from each tortilla. Place on ungreased baking sheet, coat with cooking spray. Sprinkle tortillas with spice mix. Bake until crisp, 10 min. Cool.
  4. In bowl, combine beans, corn, red pepper, onion, juice, zest, and chili powder with remaining salt. Spoon about 1 tsp sour cream onto each tortilla round, top with 2 tsp. bean mixture and 1 tsp guacamole.
