tortilla Chips With Corn Salsa
GARNISH WITH CILANTRO LEAVES.
1/2 tsp salt
1/4 tsp pepper
1/4 tsp cumin
1/8 tsp coriander
6 flour tortillas
15 oz can black beans, drained
11 oz can corn kernels
1 roasted red pepper from a jar, diced
1/2 red onion, diced
1 tbs lime juice
1 tsp lime zest
1/2 tsp chili powder
1 cup sour cream
1 cup guacamole
- HEAT OVEN TO 400F.
- Combine 1/4 tsp salt, pepper, cumin, and coriander.
- Cut out 7 circles from each tortilla. Place on ungreased baking sheet, coat with cooking spray. Sprinkle tortillas with spice mix. Bake until crisp, 10 min. Cool.
- In bowl, combine beans, corn, red pepper, onion, juice, zest, and chili powder with remaining salt. Spoon about 1 tsp sour cream onto each tortilla round, top with 2 tsp. bean mixture and 1 tsp guacamole.
