White Chip Lemon Bars


Yield: about 3 dozen


1 1/4 cups flour, divided
1 cup granulated sugar, divided
1/3 cup butter, softened
3/4 cup premier white chips
2 eggs, slightly beaten
1/4 cup lemon juice
2 tsp freshly grated lemon peel
powdered sugar


  1. Preheat oven to 350 F.
  2. Stir together 1 cup flour and 1/4 cup granulated sugar in a medium bowl. Cut in the butter using a pastry blender until mixture resembles coarse crumbs.
  3. Press mixture onto the bottom of a 9 inch square baking pan. Bake for 15 minutes or until lightly browned.
  4. Remove from oven. Sprinkle the white chips over the crust. Stir together eggs, lemon juice, lemon peel, remaining 1/4 cup flour and remaining 3/4 cup sugar in a medium bowl. Carefully pour over the chips and crust. Bake for 15 minutes or until set.
  5. Cool slightly in the pan on wire rack. Sift the powdered sugar over the top. Cool completely. Cut into bars.
