Zucchini Rollatini With Cheese


2 pounds zucchini, sliced lengthwise
3 tbs olive oil
1 cup ricotta cheese
1/2 cup shredded Parmesan cheese
1 cup bruschetta topping


  1. HEAT GRILL. Brush zucchini with olive oil, season with salt and pepper to taste. Grill zucchini 4 min. turning once.
  2. In bowl, combine ricotta, and Parmesan cheeses. Cross 1 zucchini slice with another forming a plus sign.
  3. Spoon 2 tbs cheese mixture into center. Pull up ends of slices to enclose cheese, secure with a decorative toothpick. Repeat.
